Quick & Clean Chickpea Blondies

Looking for a healthy treat? But don't want it to taste like crap?!? GIRL, I have tried (and failed) at TONS of online healthy baking recipes so I know the struggle!

That's why I played with this one for soo long before sharing it!

Super yummy, super quick, and super clean chickpea blondies AND all you need is a blender and baking dish!

Now...let's get to the recipe cause I personally can't stand the blogs that share a dissertation on their 5 year olds entire day at kindergarten before a simple cake recipe.

Chickpea Blondie Recipe

Ingredients: 1 can (15 oz.) chickpeas, drained and rinsed 1/3 cup pure maple syrup 1/2 cup natural peanut butter, heaping 1 egg 2 tsp. vanilla extract 1/2 tsp. salt 1/4 tsp. baking powder 1/4 tsp. baking soda 1/2 cup semisweet or dark chocolate chips

Instructions: Preheat oven to 350 degrees. Add chickpeas, maple syrup, peanut butter, egg, and vanilla to a blender. Blend until smooth, and then add salt, baking powder, and baking soda, and blend again til smooth. Stir in chocolate chips. Grease a 8x8 baking dish.. Sprinkle a few extra chocolate chips on top. Bake blondies at 350 degrees for 20-24 minutes, until top is just beginning to turn golden brown. Allow to cool slightly before cutting. Good in the fridge for up to a week (not that they will last that long!)
