Healthy Egg Salad
I know you have a dozen hard boiled eggs and probably 2 dozen different egg salad recipes in front of you trying to figure out which one to use! (hint* use this one!!!) Our Healthy Egg Salad recipe keeps it light, but full of flavor.
By substituting SOME mayo for greek yogurt and bulking it up with celery and cucumber, you save the taste (and a couple calories) too!
(and not to mention a ton of time not reading about everyone's Easter in the blog before the recipe even starts...let's be real! You want an egg salad recipe, not a picture of some kids ugly dyed egg and half crying photo with the Easter Bunny! #truthbomb)
6 large hard-boiled eggs, chilled and peeled1/3 cup (80g)
plain nonfat Greek yogurt
2 tablespoons mayonnaise
1/2 teaspoon lemon zest
1 1/2 teaspoons lemon juice from 1 lemon
1/4 cup finely diced celery (about 1 small stalk)
1/4 cup finely diced cucumber (about half
1 tablespoon minced fresh parsley leaves
1 teaspoon dried dill weed
1/4 teaspoon garlic salt
Salt and pepper, to taste
Mash that sh*t up and stir it around! Done!
